Easiest Corn Chowder Recipe


My husband is an amazing cook. (one of the many reasons I am blessed to have married him) Here is a recipe that he created and makes all the time. It goes great with my dad’s biscuit recipe (which is the BEST).

Easy Corn Chowder

1 Can of Corn

1 Can of Cream Corn

2 Cans of Evaporated Milk

1 Can of Diced or Sliced Potatoes

1 lb of Ground Beef Seasoned or Hot Sausage

1 Package (approx 1 1/2 Cups) Shredded Cheese of Choice


1 Can of Sliced Carrots

1 Can or Frozen Package of Spinach

For a Tortilla Soup instead add:

1 Package of Taco Seasoning (to Ground Beef)

1 Can of Beans

3-4 Crushed Corn Chips (sprinkle over individual bowls before serving)

Simply add all ingredients to pot (cooking and seasoning meat before adding) and let come to a simmer. Great the next day as well.

Dad’s Biscuits

4 Cups of Flour

4 tsp Baking Powder

2 Tbs Sugar

1 tsp Salt


2/3 Cup Shortening


1 1/2 Cup Milk

Knead on floured surface until dough it combined. Spread out until about 1/2 in thick. Cut into circles with drinking glass or biscuit cutter. Bake on greased cookie sheet for 10-12 @ 400.

*For cheddar biscuits add 1/2 Cup of shredded cheddar cheese with dry ingredients and add a small amount of extra milk until dough consistency.
