I love how easy casseroles are. You can mix and match, change a thing or two, be creative and it is almost always fail proof. Below is a recipe for my Potato Cabbage Casserole. Delicious, simple, inexpensive.
Potato Cabbage Casserole
1 lb Red Potatoes
1 lb Breakfast Sausage
1 can Cream of Potato soup
1 can Cheese soup
1 package Bacon Pieces
1/2 head Cabbage
Cut 1 pound of washed red potatoes into 1/2 inch chunks.
In a pan heat oil, garlic, salt, pepper, and potatoes.
Fry potatoes until slightly cooked.
Chop 1/2 head of cabbage
Combine cheese and potato soup with a can and a half of milk. Wisk together.
Once potatoes are done, put them in the bottom of the baking dish.
Now brown breakfast sausage, seasoning with salt and pepper.
Layer chopped cabbage and bacon pieces on top of potatoes in baking dish.
When meat is finished, add to dish. Then pour cheese/potato sauce over the entire top of casserole.
Bake at 350 for 30 minutes, then stir everything together and place back in oven for an hour.

When finished baking let casserole sit for a few minutes and cool.
