I made these amazing little snacks while Little Man took a nap this afternoon. If you can have enough self control not to eat them all in one sitting, they make wonderful mid afternoon pick-me-ups. I packed a few for work tomorrow. Perhaps it will help me resist a second cup of coffee.
1 1/4 cup rolled oats
1/2 cup sunflower, chia, or flax seeds
1/4 cup dark chocolate pieces (I used Ghirardelli 80%)
3/4 cup All Natural peanut butter
2 1/2 Tbsp honey
Combine dry ingredients in a large bowl
Add peanut butter and honey
Roll into 1 inch balls and set 1/2 inch apart on plate
Let set in the refrigerator for 1 hr
Place in plastic bag or air tight container
Store in refrigerator
Yield one dozen
You could also use raisins instead of chocolate. They’re delicious, but remember not to eat more than a few per setting. The honey will wake you up. The protein from the peanut butter, and the oatmeal will sustain you.
